the meats

pork

goin' whole hog...
our montana raised hogs are butterflied and prepared with head and hide on, in the traditional manner. they are "q'd" between 12 and 16 hours. whole hog feeds 200+ people.

cuban pig...
roasted whole or roasts in our caja china and served with our cuban citris sauce

slabs o' ribs...
we prepare and serve only the best quality and meatiest pork spare ribs. they are trimmed and marinated in our own dry rub and "q'd" for no less than 4 hours.

mojo dogs ...
our very own award-winning sausage that combines our great local pork and our special mojo rub!

beef

brisket...
brisket is the most challenging cut of meat to barbecue. we mojo our brisket and "q" it for no less than 15 hours. this combination of dry and wet seasonings earned us the first place trophy at the 1997 alberta, canada "b-b-q on the bow" championship. the brisket is sliced and served with our own tomato-based barbecue sauce.

tri tip ...
like our brisket it's marinated with mojo rub and q'd until tender.

beef ribs...
our preparation, seasoning and "q-ing" of beef short ribs leaves you with a juicy, delicious flavor.

fowl

chicken and turkey
we prepare both our chicken and turkey in a manner that leaves them juicy and flavorful. our "low and slow" barbecue keeps all of the natural juices in these tender birds.

specialty meats

bison...
we are happy to offer you this uniquely american exotic meat. bison is the leanest and most nutritious red meat and has outstanding flavor when barbecued.

game...
we know that barbecue isn't limited to just the classics. we are also delighted to provide our barbecue expertise to your own wild game. the same principles that win b-b-q competitions make for the best tasting meals of your wild game.

we also feature a variety of cajun dishes including, but not limited to: alligator, crawfish, gumbo, crabs, shrimp, sausages, jambalaya, and hushpuppies.

our red potato salad is very popular.

our slaw is made from a delicious blend of cabbage, onion and carrots and can be made with either vinegar and oil-based or mayonnaise-based dressing.

we have combined our beans with our barbecue to make this delicious addition to our barbecue menu.
